| Measurements | Ingredients |

| 1½ lbs | Tenderloin of Beef, cut in shoestring strips |
| To Taste | Salt |
| To Taste | Pepper |
| 2 Tablespoons | Butter |
| 1 Tablespoon | Flour |
| 2 Cups | Stock |
| 1 Tablespoon | Tomato Paste |
| 1 Tablespoon | Chopped Onion |
| ½ lb | Mushrooms |
| 2 Tablespoons | Sour Cream |
Instructions
- Season meat well with salt & pepper, set stand for 2 hours.
- Brown flour in butter, work to a smooth paste, stir in stock gradually, and bring to a boil.
- Stir in tomato paste.
- Add mushrooms.
- Sear meat in butter with chopped onion.
- When brown, put meat in the sauce and simmer 5 min.
- Add sour cream; heat and serve.
