| 4 T. | Soy Sauce |

| 1 small | Green Pepper, cut in strips |
| 1 cup | Onion, thinly sliced |
| As needed | Hot Fat (for browning) |
| 1/2 Cup | Water |
Instructions
- Brown pork in a small amount of hot fat.
- Add 1/2 Cup water, cover, and simmer until tender (about 1 hour).
- Drain pineapple, reserving the syrup.
- Combine sugar and cornstarch in a small bowl.
- Add the reserved pineapple syrup, vinegar, soy sauce, and salt.
- Add this mixture to the pork. Cook and stir until the gravy thickens.
- Add the pineapple, green pepper, and onion.
- Cook for 2 to 3 minutes, until vegetables are tender-crisp.
- Serve over hot fluffy rice or chow mein noodles.
