Instructions
- Preheat oven to 450°F.
- Trim off as much fat as possible from the spare ribs.
- Wash the meat and pat dry to remove excess moisture.
- Salt the ribs well.
- Place the ribs in a roasting pan (the recipe specifies a “blue enamel water rack from Hollywood Broiler”).
- Bake for 2 to 2 1/2 hours. During baking, change the position of the ribs so they get brown all over.
Note
For further browning, the recipe suggests you can or should remove the lid. When making gravy from the drippings, remove the excess fat and add water if needed.
