| Measurements | Ingredients |

| 1 can (16 oz) | Red Salmon, drained |
| ½ C | Buttermilk |
| ½ C | Flour |
| 2 | Beaten Eggs |
| ¼ t | Baking Soda |
| 1 | Small Onion, Chopped Fine |
| To Taste | Salt |
| To Taste | Pepper |
| 1 C | Cracker Crumbs |
| As Needed | Additional Cracker Crumbs |
| As Needed | Hot Grease/Oil for frying |
Instructions
- Remove large bones & skin from salmon.
- Place in bowl & flake well.
- Add the rest of the above ingredients (salmon, buttermilk, flour, eggs, baking soda, onion, salt, pepper, and 1 cup cracker crumbs).
- Shape into small croquettes.
- Roll in additional cracker crumbs.
- Fry in hot grease.
