| Measurements | Ingredients |

| 2 Cups | Cooked Crab Meat |
| 1/4 Cup | Butter |
| 1 tsp | Chopped Shallot or Onion |
| 1/4 lb | Fresh Mushrooms |
| 2 Tbsp | Brandy |
| 6 Tbsp | Sherry |
| 2 Cups | Heavy Cream |
| 2 tsp | Minced Chives |
| 2 | Egg Yolks |
| Salt & Cayenne to taste |
Instructions
- Saute crab in butter with shallot and mushrooms for 3 minutes.
- Add brandy and sherry.
- Bring to a boil.
- Add 1 3/4 cup cream.
- Boil 3 min.
- Add chives, boil 1 min.
- Beat egg yolks with remaining cream.
- Stir in crab mixture gradually.
- Remove skillet from heat.
- Heat gently until thickened - do not boil.
- Season with salt & cayenne pepper.
- Serve from a chafing dish.
