A very simple and classic baked chicken recipe. A cut-up fryer is marinated for two hours in a basic, tangy marinade of lemon juice, oil, salt, and pepper, then baked until golden brown.

Cup Lemon Juice 
Cup Salad Oil 
Teaspoon Salt 
Teaspoon Pepper 
One Cut-up Frying Chicken 

Instructions

  1. Combine all marinade ingredients ( cup lemon juice, cup salad oil, teaspoon salt, and teaspoon pepper) and mix well. 2.  Wash the chicken pieces and pat them dry with a paper towel. 3.  Put the chicken in a shallow baking dish and pour the marinade over it. 4.  Refrigerate for 2 hours, turning the chicken pieces occasionally to ensure they are evenly coated. 5.  Preheat the oven to 350°F. 6.  Remove the chicken pieces from the marinade and place them on a cooking sheet or in a baking pan. 7.  Bake for 1 hour, or until the chicken is cooked through and golden brown. 8.  Baste the chicken with the remaining marinade periodically while it bakes.
