Instructions
- Combine all marinade ingredients ( cup lemon juice, cup salad oil, teaspoon salt, and teaspoon pepper) and mix well.
- Wash the chicken pieces and pat them dry with a paper towel.
- Put the chicken in a shallow baking dish and pour the marinade over it.
- Refrigerate for 2 hours, turning the chicken pieces occasionally to ensure they are evenly coated.
- Preheat the oven to 350°F.
- Remove the chicken pieces from the marinade and place them on a cooking sheet or in a baking pan.
- Bake for 1 hour, or until the chicken is cooked through and golden brown.
- Baste the chicken with the remaining marinade periodically while it bakes.
