6 to 8 Chicken Breasts 
Green Bell Pepper 
Yellow Bell Pepper 
Red Bell Pepper 
As Needed Purple Onion 
1 jar Picante Sauce 
1 cup Cheddar Cheese, shredded 
To Taste Salt 
As Needed Butter (for greasing pan) 

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place the chicken breasts in a large, buttered baking pan.
  3. Salt the chicken lightly and let it set for a few minutes.
  4. Sauté the green, yellow, and red bell peppers. Add some sliced purple onion and continue to sauté.
  5. Spread the pepper and onion mixture over the chicken breasts.
  6. Cover everything with the jar of Picante Sauce.
  7. Cook for approximately 1 hour, or until the chicken is done.
  8. Top the dish with 1 cup of cheddar cheese and cook a little longer, until the cheese is melted and bubbly.
