1Green Bell Pepper
1Yellow Bell Pepper
1Red Bell Pepper
As NeededPurple Onion
1 jarPicante Sauce
1 cupCheddar Cheese, shredded
To TasteSalt
As NeededButter (for greasing pan)

Instructions

  1. Place the chicken breasts in a large, buttered baking pan.
  2. Salt the chicken lightly and let it set for a few minutes.
  3. Sauté the green, yellow, and red bell peppers. Add some sliced purple onion and continue to sauté.
  4. Spread the pepper and onion mixture over the chicken breasts.
  5. Cover everything with the jar of Picante Sauce.
  6. Cook for approximately 1 hour, or until the chicken is done.
  7. Top the dish with 1 cup of cheddar cheese and cook a little longer, until the cheese is melted and bubbly.
