Instructions
1.s Preheat the oven to 500°F with a Pyrex baking dish inside to heat up. 2.s Place a bit of chicken fat trimmings in the bottom of the hot Pyrex dish and let it render in the oven. 3.s Place the roast in the hot pan and brown it well on each side in the 500°F oven. 4.s Season the roast with salt. 5.s Turn the oven temperature down to 350°F. 6.s About 2 hours after the initial browning, add the 3 onions to the pan. 7.s Continue to roast until the desired doneness is reached.
Note
The card has a note: “if it doesn’t get brown keep temp up, otherwise turn to 350°.” It also says this method is the “Same for Prime Ribs.”
