- Preheat oven to 350°F (175°C).
- Season the brisket with salt and pepper.
- Brown the brisket on all sides in a heavy pan with hot fat or oil.
- Transfer the browned meat to a roaster with a secure lid.
- Cook, covered, for approximately 2 hours (half an hour for each pound of meat), or until fork-tender.
Note
