19 inch Pie Shell (Unbaked)
1 cupGrated Swiss Cheese
1 cupMeat (Cooked, diced Ham suggested)
3Eggs
1/2 pint (1 cup)Heavy Cream
1/2 teaspoonSalt
To tastePepper
To tasteNutmeg

Instructions

  1. Preheat oven to 450°F.
  2. Sprinkle the grated Swiss cheese and diced ham into the bottom of the unbaked pie shell.
  3. In a bowl, beat the eggs, heavy cream, salt, pepper, and nutmeg together.
  4. Pour the egg mixture over the cheese and ham.
  5. Bake in the upper 1/3 of the oven at 450°F for 8-10 minutes.
  6. Reduce the oven temperature to 350°F and continue to bake for 30-40 minutes, or until the quiche is set and a knife inserted in the center comes out clean.
  7. Let cool for 10 minutes before serving.

Note

The baking instructions on the original card are listed backward. The method above (a hot start, then a lower temperature) is the standard technique for baking a quiche in an unbaked crust and will yield the best results.
