Instructions
- Preheat the oven to 350°F. Grease a casserole dish.
- Cook the spinach according to package directions. Drain the spinach very well, squeezing out excess water.
- In a large bowl, combine the drained spinach, beaten eggs, chopped onion, milk, shredded cheese, and cooked rice.
- Season the mixture to taste with salt and pepper.
- Pour the mixture into the greased casserole dish.
- Bake for 30 minutes, or until the casserole is set.
