1 packageSpinach (10 oz, frozen chopped)
2Eggs, beaten
1/4 cupOnion, chopped
1 cupMilk
1 cupSharp Cheese, shredded
1 cupCooked Rice
To TasteSeasoning (Salt and Pepper)

Instructions

  1. Preheat the oven to 350°F. Grease a casserole dish.
  2. Cook the spinach according to package directions. Drain the spinach very well, squeezing out excess water.
  3. In a large bowl, combine the drained spinach, beaten eggs, chopped onion, milk, shredded cheese, and cooked rice.
  4. Season the mixture to taste with salt and pepper.
  5. Pour the mixture into the greased casserole dish.
  6. Bake for 30 minutes, or until the casserole is set.
