6 medSweet Potatoes
1 TOleo (or Butter)
To TasteSalt & Pepper
PinchNutmeg
As NeededMilk (to whip)
Filling
2 cCut up cooked Ham
2 TMargarine
1/2 cGreen Pepper or Pimento strips
1 can (#2)Drained Pineapple Chunks
1 TCornstarch
2 TBrown Sugar
3/4 cPineapple Juice
2 TVinegar

Instructions

  1. Cook, mash potatoes - add butter, salt, pepper, nutmeg & milk to whip.
  2. Saute ham in 2 T margarine, stirring until golden.
  3. Add green pepper & pineapple chunks - cook 2-3 min.
  4. Stir in combined br. sugar & cornstarch then juice & vinegar.
  5. Cook stirring until clear & thick.
  6. Pour mixture into 9” pie plate, drop spoonfuls of potato on top.
  7. Bake until bubbling hot.
