1Onion, chopped
1 canCream of Chicken Soup
1 canCream of Mushroom Soup
2Chicken Bouillon Cubes
1 cupHot Water
1 can (2-3 pounds)Boned Chicken
1 canChopped Green Chile
As NeededCorn Tortillas
1 poundGrated Cheese

Instructions

  1. Preheat the oven to 350°F.
  2. In a skillet, brown the chopped onion in 2 tablespoons of butter.
  3. In a large bowl, mix together the sautéed onion, cream of chicken soup, cream of mushroom soup, chicken bouillon cubes dissolved in hot water, boned chicken, and chopped green chile.
  4. In a 10x13 inch pan, create layers starting with tortillas, then the chicken mixture, then grated cheese.
  5. Repeat the layers once more (“Layer twice”).
  6. Bake for at least 35 minutes.
