Instructions
- Preheat oven to 350°F. Grease a large casserole dish.
- In a large skillet, brown the ground meat, chopped onion, garlic, and green pepper. Drain excess fat.
- Stir in the salt, pepper, and drained pimentos.
- Add the cream of chicken soup, cream of mushroom soup, drained corn, cooked rice (or noodles), and sour cream. Mix well.
- Pour the mixture into the casserole dish.
- Sprinkle the chow mein noodles evenly over the top.
- Bake for 45 minutes to 1 hour, or until hot and bubbly.

Despite the title “Cheddar Chowder,” this classic recipe does not actually contain any cheddar cheese. It is a savory ground beef and chow mein noodle casserole. It serves 10.
