1Chopped Onion
1 CloveGarlic, minced
1Green Pepper, chopped
1 canPimentos, drained
Salt & Pepper to taste
1 CanCream of Chicken Soup
1 CanCream of Mushroom Soup
1 Tall CanWhole Kernel Corn, drained
3 CupsCooked Rice or Noodles
1 CupSour Cream
1 CanChow Mein Noodles

Instructions

  1. Preheat oven to 350°F. Grease a large casserole dish.
  2. In a large skillet, brown the ground meat, chopped onion, garlic, and green pepper. Drain excess fat.
  3. Stir in the salt, pepper, and drained pimentos.
  4. Add the cream of chicken soup, cream of mushroom soup, drained corn, cooked rice (or noodles), and sour cream. Mix well.
  5. Pour the mixture into the casserole dish.
  6. Sprinkle the chow mein noodles evenly over the top.
  7. Bake for 45 minutes to 1 hour, or until hot and bubbly.

Note

Despite the title “Cheddar Chowder,” this classic recipe does not actually contain any cheddar cheese. It is a savory ground beef and chow mein noodle casserole. It serves 10.
