This classic breakfast casserole, also known as a strata, gets its “soufflé” name from the way it puffs up in the oven. It’s a perfect make-ahead dish for brunch.

Instructions
- Preheat oven to 325°F. Grease a casserole dish.
- Remove the crusts from the bread slices and cut the bread into cubes.
- In a mixing bowl, beat the eggs well. Stir in the milk, salt, and pepper.
- Create layers in the prepared dish: start with a layer of bread cubes, followed by a layer of cheese, and then pour some of the egg mixture over it.
- Repeat the layers until all ingredients are used.
- Bake for 1 hour, or until puffed and golden.
- Serve immediately.
Note
For a richer flavor, you can assemble the casserole, cover it, and refrigerate for a few hours or overnight before baking. This allows the bread to fully absorb the egg mixture.
