Orange Icing
Instructions
Step 1: Prepare the Batter
- Dissolve 1 pkg. orange gelatin in 2/3 cup boiling water. Set aside to cool completely.
- In a large mixing bowl, beat 4 eggs well. Add 2/3 cup vegetable oil and the cooled orange gelatin mixture to the beaten eggs, mixing to combine.
- Add 1 pkg. orange cake mix to the wet mixture. Beat well with an electric mixer for 3 minutes until smooth and fully incorporated.
- Gently fold in 1 can coconut until evenly distributed throughout the batter.
Step 2: Bake and Glaze
- Pour the batter into a greased tube pan. Bake at 350°F for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the icing by squeezing 1 large or 2 small oranges to yield fresh juice, then mix the juice with 1 cup sugar until dissolved.
- Cool the baked cake in the pan for 10 minutes, then invert it onto a serving plate right side up.
- Drip the prepared orange icing over the cake while it is still warm so it absorbs the sweet citrus glaze.
