Instructions
- In a saucepan, combine the sugars, honey, salt, and sherry.
- Stir over medium heat until the sugars dissolve, then continue to boil without stirring until the mixture reaches the soft-ball stage (235-245°F).
- Remove the pan from the heat and immediately add the cinnamon, nutmeg, and walnuts.
- Beat the mixture with a wooden spoon as it starts to cool. Continue beating until the clear syrup turns opaque and creamy.
- Pour the coated nuts onto waxed paper and quickly separate them with forks before they harden. Let cool completely.
