Instructions

  1. In a mixing bowl, beat the softened butter until creamy.
  2. Stir in the cream, vanilla, and your chosen flavoring (lemon juice, orange juice, or melted chocolate).
  3. Gradually beat in the confectioners’ sugar until the icing is smooth and spreadable. Add more liquid if too thick, or more sugar if too thin.
  4. If making the lemon or orange version, stir in the grated rind.
  5. Beat for another minute until fluffy, then spread on a cooled cake.

Note

For the chocolate variation, use unsweetened or semi-sweet baking chocolate and ensure it has cooled to room temperature before beating it into the butter.
