Instructions (Clarified Method)

  1. In the top of a double boiler (or a heatproof bowl set over a saucepan of simmering water), combine the brown sugar, water, egg white, and cream of tartar.
  2. Place over the simmering water and begin beating with a handheld electric mixer, starting on low and increasing to high.
  3. Beat constantly for about 7 minutes, or until the icing is thick, glossy, and holds stiff peaks.
  4. Remove from the heat and use immediately to frost a cooled cake.

Note

This frosting must be used immediately after making, as it will start to set. The vinegar or cream of tartar helps to stabilize the egg white.
