19-inch Pre-baked Pie Shell
4-5 CupsFresh Peaches, peeled and sliced
Glaze:
to 1 CupSugar
2 TablespoonsCornstarch
1 CupWater
2 TablespoonsWhite Corn Syrup
3-4 TablespoonsPeach Jello powder
Dash (Optional)Almond Flavoring

Instructions

  1. Prepare a 9-inch pre-baked pie shell and let it cool.
  2. Arrange the sliced fresh peaches inside the cooled shell.
  3. For the Glaze: In a saucepan, whisk together the sugar and cornstarch. Stir in the water and corn syrup.
  4. Bring the mixture to a boil and cook for 5 minutes, stirring, until thickened and clear.
  5. Remove from the heat and immediately stir in the peach Jello powder (and optional almond flavoring) until completely dissolved.
  6. Let the glaze cool until lukewarm.
  7. Pour the cooled glaze evenly over the peaches in the crust.
  8. Refrigerate for several hours, or until the glaze is completely set.
  9. Serve chilled, with whipped cream if desired.

Note

This pie must be made in a pre-baked and cooled pie shell, as the filling is not baked.
