Instructions
- Prepare a 9-inch pre-baked pie shell and let it cool.
- Arrange the sliced fresh peaches inside the cooled shell.
- For the Glaze: In a saucepan, whisk together the sugar and cornstarch. Stir in the water and corn syrup.
- Bring the mixture to a boil and cook for 5 minutes, stirring, until thickened and clear.
- Remove from the heat and immediately stir in the peach Jello powder (and optional almond flavoring) until completely dissolved.
- Let the glaze cool until lukewarm.
- Pour the cooled glaze evenly over the peaches in the crust.
- Refrigerate for several hours, or until the glaze is completely set.
- Serve chilled, with whipped cream if desired.
Note
This pie must be made in a pre-baked and cooled pie shell, as the filling is not baked.
