Instructions
- In a clean, dry bowl, beat the egg whites until foamy.
- Add the cream of tartar and continue beating until soft peaks form.
- Gradually add the sugar, one tablespoon at a time, beating continuously until the meringue is stiff and glossy.
- Spread the meringue over a prepared pie, making sure it touches the crust on all sides.
- Place the pie under the broiler and toast until the peaks are golden brown. Watch it carefully as this happens very quickly.
Warning
Meringue can go from golden to burnt in a matter of seconds under a broiler. Do not walk away while it is toasting.
