3Egg Whites
3/8 TeaspoonCream of Tartar
6 TablespoonsSugar
1/2 TeaspoonFlavoring (Vanilla)

Instructions

  1. In a clean, dry bowl, beat egg whites with cream of tartar until frothy.
  2. Gradually beat in the sugar, one tablespoon at a time.
  3. Continue beating until the meringue is stiff and glossy.
  4. Beat in the flavoring.
  5. Pile the meringue onto a pie filling, carefully sealing the meringue to the edge of the crust.
  6. Bake at 400°F for 8 to 10 minutes, or until golden brown.
  7. Let cool before serving.

Note

For the best volume, use room temperature egg whites and make sure your mixing bowl and beaters are completely free of any grease or oil.
