This is a classic fizzy Jello salad with a creamy texture from the cream cheese and a delightful crunch from pecans.

1 sm. box (~3 oz)Lime Jello powder
1 (8 oz) PkgCream Cheese, softened
1 CupBoiling Water
1 sm. can (~8 oz)Crushed Pineapple, drained
1 tspVanilla
1 TbspSugar
1 (10 oz) bottle7-Up Soda, chilled
1 CupPecans, chopped

Instructions

  1. In a large bowl, beat the softened cream cheese with the dry Jello powder until combined.
  2. Gradually pour in the boiling water, mixing until smooth and the Jello is dissolved.
  3. Stir in the sugar and vanilla.
  4. Slowly pour in the chilled 7-Up.
  5. Fold in the drained pineapple and chopped pecans.
  6. Pour into a mold and chill until firm.

Note

The original recipe card suggests a variation: You can substitute orange Jello and mandarin oranges for the lime Jello and pineapple.
