| 2 small packages | Cream Cheese, softened |
| 1/2 pint | Coffee Cream (or half-and-half) |
| #2 can | Crushed Pineapple |

Instructions
- Drain the juice from the pineapple into a saucepan (if not enough juice, add water to make 1 cup). Bring the juice to a boil.
- Pour the boiling juice over the lime Jello powder in a large bowl and stir until dissolved. Let cool.
- In a separate bowl, beat the softened cream cheese and coffee cream together until smooth.
- Whisk the cream cheese mixture into the cooled Jello.
- Stir in the drained pineapple, chopped pecans, and diced celery.
- Pour the mixture into a mold and refrigerate until firm.
