1 packageLime Jello
2 small packagesCream Cheese, softened
1/2 pintCoffee Cream (or half-and-half)
#2 canCrushed Pineapple
1 cupPecans, chopped
1 cupDiced Celery

Instructions

  1. Drain the juice from the pineapple into a saucepan (if not enough juice, add water to make 1 cup). Bring the juice to a boil.
  2. Pour the boiling juice over the lime Jello powder in a large bowl and stir until dissolved. Let cool.
  3. In a separate bowl, beat the softened cream cheese and coffee cream together until smooth.
  4. Whisk the cream cheese mixture into the cooled Jello.
  5. Stir in the drained pineapple, chopped pecans, and diced celery.
  6. Pour the mixture into a mold and refrigerate until firm.
