A classic molded Jello salad that gets a creamy texture from cream cheese and a rich flavor from pureed apricots.

| 1 sm. pkg. | Cream Cheese, softened |
| 1 Cup | Boiling Water |
| 1 can | Apricots ( |
| 1/2 Cup | Reserved Apricot Juice |
| 1/2 Cup | Chopped Pecans |
Instructions
- Drain the apricots, reserving 1/2 cup of the juice. Pulverize the drained apricots in a blender.
- In a bowl, blend the dry lemon Jello mix and the softened cream cheese with a fork.
- Pour the boiling water over the mixture and stir until everything is dissolved and smooth.
- Stir in the pulverized apricots and the reserved apricot juice.
- Stir in the chopped pecans.
- Pour into a mold and refrigerate until firm.
