A unique take on candied peel, this recipe uses lime gelatin to give grapefruit peel a festive green color and an extra citrusy kick.

Instructions
- Score the peel of two grapefruit lengthwise into four sections and remove. Scrape away most of the white membrane and cut the peel into -inch strips.
- Place two cups of the peel in a pan, cover with cold water, boil for 20 minutes, and drain. Repeat this process two more times (for a total of three boils).
- In a saucepan, combine 1 ½ cups of sugar, ¾ cup of water, and ½ teaspoon of salt. Cook and stir until the sugar dissolves.
- Add the drained peel to the syrup, bring to a boil, and simmer for 20 minutes until translucent.
- Gradually stir in the lime-flavored gelatin over low heat until dissolved.
- Remove the peel from the syrup and drain on a rack for 20 minutes.
- Roll each piece of peel in green sugar crystals (if using).
- Let the peel dry thoroughly on a rack before storing in a covered jar.
