Instructions

  1. Preheat your oven to 375°F. Lightly grease a baking sheet.
  2. In a medium bowl, sift together the flour, baking powder, salt, and your choice of cinnamon or nutmeg.
  3. In a large bowl, combine the 1 cup of sugar and the cooking oil.
  4. Add the eggs to the oil mixture one at a time, beating well after each addition. Stir in the vanilla.
  5. Add the flour mixture to the wet ingredients all at once and beat until a smooth dough forms.
  6. Pour the additional granulated sugar for coating into a small, shallow bowl.
  7. Shape the dough into 1-inch balls and roll each ball in the sugar to coat completely.
  8. Place the coated balls on the prepared baking sheet.
  9. Bake for 10 to 12 minutes, until the edges are lightly golden.
