A magical and easy recipe from Rebecca for ‘Forgotten’ meringue cookies. These light, airy cookies are loaded with chocolate chips and nuts, and bake overnight in a cooling oven.

Instructions
- Preheat your oven to 350°F. Line a cookie sheet with parchment paper.
- In a clean, dry bowl, beat the egg whites with an electric mixer on high speed until very stiff peaks form.
- Gradually add the sugar and vanilla, continuing to beat until the meringue is stiff and glossy.
- Gently fold in the chopped nuts and chocolate chips with a spatula.
- Drop the mixture by rounded teaspoonfuls onto the prepared cookie sheet.
- Place the cookie sheet into the preheated oven.
- Immediately TURN THE OVEN OFF.
- Leave the cookies in the closed oven overnight, or for at least 8 hours, without opening the door.
Note
This type of cookie is often called a “Forgotten Cookie” because you put it in the oven and “forget” about it overnight. The residual heat from the oven gently bakes and dries out the meringues.
