A magical and easy recipe from Rebecca for ‘Forgotten’ meringue cookies. These light, airy cookies are loaded with chocolate chips and nuts, and bake overnight in a cooling oven.

2Egg Whites, beaten stiff
2/3 cupSugar
1 teaspoonVanilla
1 cupChopped Nuts
1 (6 oz.) pkgChocolate Chips

Instructions

  1. Preheat your oven to 350°F. Line a cookie sheet with parchment paper.
  2. In a clean, dry bowl, beat the egg whites with an electric mixer on high speed until very stiff peaks form.
  3. Gradually add the sugar and vanilla, continuing to beat until the meringue is stiff and glossy.
  4. Gently fold in the chopped nuts and chocolate chips with a spatula.
  5. Drop the mixture by rounded teaspoonfuls onto the prepared cookie sheet.
  6. Place the cookie sheet into the preheated oven.
  7. Immediately TURN THE OVEN OFF.
  8. Leave the cookies in the closed oven overnight, or for at least 8 hours, without opening the door.

Note

This type of cookie is often called a “Forgotten Cookie” because you put it in the oven and “forget” about it overnight. The residual heat from the oven gently bakes and dries out the meringues.
