Instructions
- In a large bowl, thoroughly cream together the shortening, brown sugar, and egg.
- Stir in the cold coffee and applesauce.
- In a separate bowl, whisk together the flour, baking soda, salt, nutmeg, cloves, and cinnamon.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Fold in the raisins and nuts.
- Cover the dough and chill for at least 2 hours.
- Preheat your oven to 375°F. Lightly grease your baking sheets.
- Drop rounded tablespoonfuls of the chilled dough 2 inches apart on the prepared baking sheets.
- Bake for 9 to 12 minutes, until lightly browned. The cookies are done when they are set and leave almost no imprint when touched lightly.
