Instructions
- Preheat oven to 350°F. Lightly grease a cookie sheet.
- Sift the flour and salt together into a bowl.
- In a separate large bowl, cream together the softened butter, cream cheese, and grated orange rind until smooth.
- Add the sugar, egg, vanilla, and orange extract. Beat with an electric mixer until the mixture is light and fluffy.
- Stir in the flour mixture until well combined. If desired, fold in chocolate chips.
- Drop dough by the teaspoonful onto the prepared cookie sheet.
- Flatten each mound of dough slightly with the back of a spoon.
- Bake for 15 minutes.
- Optional browning: If the cookies are not browned to your liking, you can place them under a preheated broiler for a few seconds. Watch them very carefully as they can burn in an instant.
- Let the cookies cool on the sheet for a minute before transferring them to a wire rack.
