Instructions
- Make Oatmeal Layer: Preheat the oven to 350°F. Grease a 9x9 inch pan.
- In a medium bowl, beat the shortening and sugar until fluffy. Beat in the egg and ½ teaspoon of vanilla.
- In a separate bowl, whisk together the flour, baking soda, and ½ teaspoon of salt. Add this to the sugar mixture and mix well.
- By hand, stir in the oats and ½ cup of walnuts.
- Reserve 1 cup of this oat mixture for the topping. Press the rest of the mixture firmly and evenly into the bottom of the prepared pan to form the crust.
- Make Fudge Layer: In a small saucepan over low heat, combine the chocolate pieces, 1 tablespoon of butter, condensed milk, and ¼ teaspoon of salt. Cook, stirring frequently, until the chocolate is melted and the mixture is smooth.
- Remove the pan from the heat and stir in the ½ cup of walnuts and 1 teaspoon of vanilla.
- Assemble and Bake: Spread the chocolate fudge mixture evenly over the oatmeal crust.
- Crumble the reserved 1 cup of the oat mixture over the top of the fudge layer.
- Bake for 25 minutes, or until the surface is lightly browned. Let cool completely in the pan on a wire rack before cutting into bars.
