For the Oatmeal Layer:

For the Fudge Layer:
1 (6 ounce) packageSemi-sweet Chocolate Pieces
1 tablespoonButter or Margarine
1/3 cupSweetened Condensed Milk
1/4 teaspoonSalt
1/2 cupChopped Walnuts
1 teaspoonVanilla

Instructions

  1. Make Oatmeal Layer: Preheat the oven to 350°F. Grease a 9x9 inch pan.
  2. In a medium bowl, beat the shortening and sugar until fluffy. Beat in the egg and ½ teaspoon of vanilla.
  3. In a separate bowl, whisk together the flour, baking soda, and ½ teaspoon of salt. Add this to the sugar mixture and mix well.
  4. By hand, stir in the oats and ½ cup of walnuts.
  5. Reserve 1 cup of this oat mixture for the topping. Press the rest of the mixture firmly and evenly into the bottom of the prepared pan to form the crust.
  6. Make Fudge Layer: In a small saucepan over low heat, combine the chocolate pieces, 1 tablespoon of butter, condensed milk, and ¼ teaspoon of salt. Cook, stirring frequently, until the chocolate is melted and the mixture is smooth.
  7. Remove the pan from the heat and stir in the ½ cup of walnuts and 1 teaspoon of vanilla.
  8. Assemble and Bake: Spread the chocolate fudge mixture evenly over the oatmeal crust.
  9. Crumble the reserved 1 cup of the oat mixture over the top of the fudge layer.
  10. Bake for 25 minutes, or until the surface is lightly browned. Let cool completely in the pan on a wire rack before cutting into bars.
