A classic no-bake holiday confection. These rich chocolate brandy balls are made with a simple mixture of vanilla wafer crumbs, cocoa, walnuts, and brandy, all held together with corn syrup and rolled in sugar.

2 ½ CupsFinely Crushed Vanilla Wafers (approx. 60 wafers)
1 CupSifted Confectioners’ Sugar
2 TablespoonsCocoa Powder
½ CupFinely Chopped Walnuts
¼ CupBrandy
¼ CupLight Corn Syrup
1 ½ Teaspoons (Optional)Water (if needed)
For RollingGranulated Sugar

Instructions

  1. In a large bowl, combine the finely crushed vanilla wafer crumbs, sifted confectioners’ sugar, cocoa powder, and finely chopped walnuts.
  2. Stir in the brandy and light corn syrup. Mix well until a stiff, sticky dough forms. If the mixture seems too dry, add a little water (up to 1 ½ teaspoons).
  3. Shape the mixture into ¾-inch balls.
  4. Roll each ball in granulated sugar to coat completely.
  5. Store in a tightly covered container. For the best flavor, let them age for a day or two before serving.
