A quick and easy recipe for classic peanut brittle from Mickey Martin, made entirely in the microwave. This simple method creates a perfectly crunchy, sweet, and salty candy in just a few minutes.

| 1/2 cup | White Karo Syrup (Light Corn Syrup) |

| 1 tablespoon | Margarine or Butter |
| 1-2 teaspoons | Vanilla |
| 1 teaspoon | Baking Soda |
Instructions
- Preparation: Generously grease a large cookie sheet and set it aside.
- In a large (at least 2-quart) microwave-safe bowl, mix the peanuts, sugar, corn syrup, and salt.
- Microwave on HIGH for 4 minutes.
- Carefully remove the bowl from the microwave and stir the hot mixture well.
- Return to the microwave and cook on HIGH for another 4 minutes.
- Carefully remove and stir in the margarine.
- Return to the microwave and cook on HIGH for 3 minutes.
- Work quickly for this final step! Carefully remove the very hot bowl from the microwave. Add the vanilla and baking soda. Stir rapidly until the mixture becomes light and foamy.
- Immediately pour the mixture onto the greased cookie sheet, spreading it as thinly as possible with a spatula.
- Let the brittle set and cool completely until hard.
- Once cooled, break the brittle into pieces.
Warning
The sugar mixture will be extremely hot. Use oven mitts and be very careful when handling the bowl and pouring the brittle. Microwave cooking times are based on a standard 1000-watt oven; you may need to adjust the times slightly for your microwave.
