Instructions
- Preheat oven to 350°F. Line cupcake pans with paper liners.
- Prepare the chocolate cake mix according to the package directions.
- Fill the cupcake liners only about halfway full with the cake batter.
- Prepare the Filling: In a separate bowl, beat together the softened cream cheese, egg, and sugar with an electric mixer until smooth.
- By hand, stir in the chocolate chips and coconut.
- Drop about one heaping teaspoon of the filling mixture on top of the batter in each cupcake cup.
- Bake for 20-25 minutes, or until the cake portion is cooked through and a toothpick inserted into the cake (avoiding the filling) comes out clean.
