A simple yet impressive cupcake recipe using a chocolate cake mix as a base. Each cupcake is filled with a sweet and tangy cream cheese mixture loaded with coconut and chocolate chips.

For the Cupcakes:
1 PackageChocolate Cake Mix (plus ingredients on box)
For the Filling:
1 (8 oz) PackagePhiladelphia Cream Cheese, softened
1Egg
½ CupSugar
1 (6 oz) PackageChocolate Chips
1 CupFlaked Coconut

Instructions

  1. Preheat oven to 350°F. Line cupcake pans with paper liners.
  2. Prepare the chocolate cake mix according to the package directions.
  3. Fill the cupcake liners only about halfway full with the cake batter.
  4. Prepare the Filling: In a separate bowl, beat together the softened cream cheese, egg, and sugar with an electric mixer until smooth.
  5. By hand, stir in the chocolate chips and coconut.
  6. Drop about one heaping teaspoon of the filling mixture on top of the batter in each cupcake cup.
  7. Bake for 20-25 minutes, or until the cake portion is cooked through and a toothpick inserted into the cake (avoiding the filling) comes out clean.
