Instructions
- Preheat your oven to 375°F. Grease and flour two 8-inch round cake pans.
- In a small saucepan, melt the butterscotch morsels with the ¼ cup of water over low heat. Stir until smooth, then set aside to cool.
- In a separate bowl, sift together the flour, salt, baking powder, and baking soda.
- In a large bowl, cream the shortening and sugar together with an electric mixer.
- Add the unbeaten eggs one at a time, beating well after each addition.
- Blend in the cooled butterscotch mixture.
- Alternately add the dry ingredients and the milk to the creamed mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Pour the batter evenly into the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Note
The original recipe card did not list a primary liquid for the batter (like milk or buttermilk). One cup of milk has been added to create a standard, workable cake batter.
