½ Pound (8 oz)Grated Cheddar Cheese
2 StripsBacon (uncooked, diced fine)
5-6Green Onions, tops and all, chopped fine
2 TablespoonsCooking Oil
½ TeaspoonSalt
⅛ TeaspoonPepper
1 Package (of 6)English Muffins

Instructions

  1. Preheat your broiler.
  2. In a bowl, combine the grated cheddar, finely diced uncooked bacon, finely chopped green onions, cooking oil, salt, and pepper. Mix well. (This mixture can be made ahead and kept in the refrigerator).
  3. Split the six English muffins in half.
  4. Spread the cheese mixture over each of the twelve muffin halves, covering them to the sides.
  5. Place the muffin halves on a broiler pan and broil about 4 inches from the heat for about 8 minutes, or until the topping is bubbly, browned, and the bacon is cooked through.
  6. Serve immediately while hot. For smaller appetizers, you can cut the rounds into wedges.
