A simple yet elegant recipe from Linda Brown for creating your own Parmesan Melba Toast. Thinly sliced bread is basted with margarine and baked low and slow until perfectly crisp.

1 LoafFavorite Bread (Roll, Bagel, Sour Dough, Wheat, etc.)
½ Cup (1 stick)Margarine or Butter, melted
1 CupParmesan Grated Cheese

Instructions

  1. Freeze Bread: For best results, freeze your loaf of bread until it is firm. This makes it much easier to slice thinly.
  2. Preheat Oven: Preheat your oven to a low temperature, between 225-250°F.
  3. Slice Bread: Using an electric knife or a very sharp serrated knife, slice the frozen bread as thinly as possible, aiming for 1/16” to 1/4” thick slices.
  4. Prepare for Baking: Arrange the paper-thin slices on a cookie sheet in a single layer.
  5. Baste: Baste both sides of each bread slice with the melted margarine.
  6. Add Cheese: Sprinkle a generous layer of grated Parmesan cheese on the top side of each slice.
  7. Bake: Bake for 45 minutes to 1 hour. The toasts are done when they are golden, completely dry, and crisp.
  8. Store: Let the toasts cool completely before storing them in an airtight container.
