1/4 cupRoasted, peeled, chopped Green Chile

Instructions

  1. Preheat the oven to 375°F. Grease a 9x5-inch loaf pan.
  2. In a small skillet, sauté the chopped onion in a little margarine or oil until soft. Set aside to cool.
  3. In a large bowl, sift together the dry ingredients: flour, baking powder, salt, and cumin.
  4. In a separate bowl, cream together the softened margarine and sugar until light and fluffy.
  5. Beat in the mashed avocado and the beaten eggs.
  6. Stir in the sautéed onion and the chopped green chiles.
  7. Add the dry ingredients to the wet ingredients and mix with a spatula until just combined.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 15 minutes at 375°F.
  10. Reduce the oven heat to 350°F and continue to bake for another 55 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
