Instructions
- Preheat the oven to 375°F. Grease a 9x5-inch loaf pan.
- In a small skillet, sauté the chopped onion in a little margarine or oil until soft. Set aside to cool.
- In a large bowl, sift together the dry ingredients: flour, baking powder, salt, and cumin.
- In a separate bowl, cream together the softened margarine and sugar until light and fluffy.
- Beat in the mashed avocado and the beaten eggs.
- Stir in the sautéed onion and the chopped green chiles.
- Add the dry ingredients to the wet ingredients and mix with a spatula until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 15 minutes at 375°F.
- Reduce the oven heat to 350°F and continue to bake for another 55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
