For the Topping:
1/4 cupQuaker Oats
1 tablespoonPacked Brown Sugar
1/8 teaspoonCinnamon
1 tablespoonMelted Margarine or Butter

Instructions

  1. Heat oven to 400°F. Line 12 medium muffin cups with paper liners.
  2. In a large bowl, combine 1 1/2 cups of oats, the flour, 3/4 teaspoon of cinnamon, baking powder, and baking soda.
  3. In a separate bowl, whisk together the applesauce, milk, 1/2 cup of brown sugar, oil, and egg.
  4. Add the wet ingredients to the dry ingredients and mix just until the dry ingredients are moistened.
  5. Fill the muffin cups almost full.
  6. For the topping: In a small bowl, combine the 1/4 cup oats, 1 tablespoon brown sugar, 1/8 teaspoon cinnamon, and melted margarine.
  7. Sprinkle the topping evenly over the batter in each muffin cup.
  8. Bake for 20-22 minutes, or until a deep golden brown and a toothpick inserted into the center comes out clean.
