Instructions
- Heat oven to 400°F. Line 12 medium muffin cups with paper liners.
- In a large bowl, combine 1 1/2 cups of oats, the flour, 3/4 teaspoon of cinnamon, baking powder, and baking soda.
- In a separate bowl, whisk together the applesauce, milk, 1/2 cup of brown sugar, oil, and egg.
- Add the wet ingredients to the dry ingredients and mix just until the dry ingredients are moistened.
- Fill the muffin cups almost full.
- For the topping: In a small bowl, combine the 1/4 cup oats, 1 tablespoon brown sugar, 1/8 teaspoon cinnamon, and melted margarine.
- Sprinkle the topping evenly over the batter in each muffin cup.
