Instructions
- Preheat your oven to 400°F. Grease a 12-cup muffin pan or line it with paper liners.
- In a large mixing bowl, stir together the flours, baking powder, and salt.
- In a separate medium bowl, combine the beaten eggs, honey, and oil. Stir in the yogurt.
- Pour the yogurt mixture into the flour mixture. Stir with a spatula just until the dry ingredients are moistened; the batter will be lumpy.
- Fill the prepared muffin cups ⅔ full.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
