Instructions

  1. Preheat your oven to 350°F. Grease and flour a 9x5 inch loaf pan.
  2. In a small, heatproof bowl, place the butter and orange zest. Pour the boiling water over them and let the mixture steep to infuse the flavors.
  3. In a large bowl, whisk together the dry ingredients: flour, baking soda, salt, and baking powder.
  4. In a separate medium bowl, beat the egg with the sugar. Stir in the orange juice and vanilla.
  5. Add the steeped butter/zest/water mixture to the egg mixture and stir to combine.
  6. Pour the wet ingredients into the dry ingredients and mix with a spatula until just moistened. Do not overmix.
  7. Fold in the chopped walnuts.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
