A classic, moist date nut loaf. This recipe uses a traditional method of soaking the dates in a baking soda and boiling water mixture to create an incredibly tender and flavorful quick bread.

Instructions
- Preheat your oven to 350°F. Grease one large loaf pan or two small ones.
- In a medium heatproof bowl, combine the chopped dates and baking soda. Pour the boiling water over the mixture, then stir in the vanilla. Set this aside to cool.
- In a separate large bowl, blend the sugar and softened butter together.
- Once the date mixture has cooled, pour it into the sugar and butter mixture and stir well.
- In another bowl, whisk together the flour and salt.
- Add the dry ingredients to the wet date mixture and stir until just combined.
- Fold in the chopped nuts.
- Pour the batter into your prepared loaf pan(s).
- Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool completely in the pan before turning it out and slicing.
- Serve spread with butter or cream cheese.
