2 CupsCoarsely Chopped Walnuts
1 CupFinely Snipped Dates
1 CupHalved Glaced Cherries
⅔ CupSemi-Sweet Chocolate Bits (Chips)

Instructions

  1. Preheat your oven to 325°F. Grease a 10x5x3 inch loaf pan. Line the bottom of the pan with greased wax paper.
  2. In a medium bowl, sift together the flour, baking powder, and salt.
  3. Add the chocolate bits, chopped walnuts, snipped dates, and halved cherries to the flour mixture. Stir until all the fruit and nuts are well coated.
  4. In a separate large bowl, beat the three eggs well with an electric mixer at medium speed.
  5. Gradually beat the sugar into the eggs until the mixture is light and fluffy.
  6. Fold the flour, fruit, and nut mixture into the egg and sugar mixture until just combined.
  7. Turn the batter into the prepared loaf pan and spread evenly.
  8. Bake for 1.5 hours, or until a toothpick inserted into the center comes out clean.
  9. Cool the bread completely in the pan on a wire rack.
  10. When cooled, remove from the pan, wrap in foil, and store. It’s often best sliced the next day.
