Instructions
- Preheat your oven to 325°F. Grease a 10x5x3 inch loaf pan. Line the bottom of the pan with greased wax paper.
- In a medium bowl, sift together the flour, baking powder, and salt.
- Add the chocolate bits, chopped walnuts, snipped dates, and halved cherries to the flour mixture. Stir until all the fruit and nuts are well coated.
- In a separate large bowl, beat the three eggs well with an electric mixer at medium speed.
- Gradually beat the sugar into the eggs until the mixture is light and fluffy.
- Fold the flour, fruit, and nut mixture into the egg and sugar mixture until just combined.
- Turn the batter into the prepared loaf pan and spread evenly.
- Bake for 1.5 hours, or until a toothpick inserted into the center comes out clean.
- Cool the bread completely in the pan on a wire rack.
- When cooled, remove from the pan, wrap in foil, and store. It’s often best sliced the next day.
