1 cupSour Cream
1 cupSifted Flour
1 TbspSugar

1 cupCottage Cheese

As neededFresh Strawberries

Instructions

  1. In a large bowl, beat the eggs well.
  2. Add 1 cup of sieved (or blended) cottage cheese and 1 cup of sour cream. Beat until combined.
  3. Add the sifted flour, sugar, and salt. Beat the batter until it is smooth and thick.
  4. Heat a griddle or non-stick skillet over medium heat and melt a small amount of butter.
  5. Pour the batter to create pancakes (blintzes) of your desired size. Cook for 2-3 minutes per side, until golden brown and cooked through.
  6. As soon as you remove each blintz from the griddle, while it is still hot, place a heaping teaspoon of cottage cheese in the center.
  7. Roll it up and place on a serving plate.
  8. Top the warm, filled blintzes with sour cream and fresh strawberries to serve.
