Batter
- Separate the eggs. In a large, clean bowl, begin beating the egg whites with an electric mixer.
- When the whites become frothy, add a pinch of cream of tartar.
- Continue beating until soft peaks form, then gradually add the powdered sugar. Beat until the meringue is stiff and glossy.
- In a separate bowl, beat the egg yolks until they are thick and lemon-colored (this can take 5-10 minutes).
- Gently fold the beaten egg yolks into the stiff egg white mixture.
- Fold in the spices (cinnamon, allspice, and cloves), being generous with your measurements as the card suggests.
To Serve
- For each drink, place two heaping tablespoons (or less, to taste) of the Tom and Jerry batter into a mug.
- Add one jigger (1.5 ounces) of brandy.
- Fill the rest of the mug with warm/hot milk, stirring constantly as you pour to dissolve the batter.
- Sprinkle the top of each drink with nutmeg and serve immediately.
