Instructions
Step 1: Prepare the Gelatin
- In a Pyrex measuring cup, soften 1 envelope plain gelatin in 1/4 cup cold water.
- Set the cup in a small pan of water over medium heat on the stove, stirring occasionally until the gelatin is completely dissolved and clear.
Step 2: Mix and Chill
- In a large mixing bowl, combine the grated 2 cucumbers, grated 2 carrots, 1 cup celery, and grated 1 onion.
- Stir in 1 tsp lemon juice, 1 tsp salt, and 2 cups mayonnaise until thoroughly mixed.
- Pour the dissolved gelatin into the vegetable mixture and stir well to incorporate completely.
- Cover and place in the refrigerator to chill and set up until firm, about 2 hours.
Step 3: Assembly
- Spread the chilled mixture onto rye bread or your choice of bread to make about 20 sandwiches.
