Recipe
| Measurements | Ingredients |
|---|---|
| 6 | Large Shrimp, shelled and deveined |
| 4 | Thin Lemon Slices, with peel |
| 6 | Pimento-Stuffed Olives |
| 1 tbsp | Lemon Juice |
| 3 tbsp | Low-Calorie Italian Dressing |
| 1/2 tsp | Instant Granulated Garlic |
| 1/4 tsp | Dried Tarragon |
Instructions
- In a small bowl, whisk together the Italian dressing, lemon juice, granulated garlic, and dried tarragon to create the marinade.
- Add the shrimp, lemon slices, and olives to the bowl. Stir gently to coat everything, then cover and let marinate in the refrigerator for at least 15-30 minutes.
- Preheat your broiler. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
- Thread the ingredients onto the skewers, alternating between olives, shrimp, and lemon slices. Reserve the leftover marinade for basting.
- Place the skewers on a broiler pan or a baking sheet lined with foil.
- Broil about 4-5 inches from the heat for 3 minutes on one side.
- Flip the skewers, baste with the reserved marinade, and broil for another 3 minutes, or until the shrimp are pink and cooked through.
- Serve immediately.
