Instructions

  1. In a small bowl, whisk together the Italian dressing, lemon juice, granulated garlic, and dried tarragon to create the marinade.
  2. Add the shrimp, lemon slices, and olives to the bowl. Stir gently to coat everything, then cover and let marinate in the refrigerator for at least 15-30 minutes.
  3. Preheat your broiler. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
  4. Thread the ingredients onto the skewers, alternating between olives, shrimp, and lemon slices. Reserve the leftover marinade for basting.
  5. Place the skewers on a broiler pan or a baking sheet lined with foil.
  6. Broil about 4-5 inches from the heat for 3 minutes on one side.
  7. Flip the skewers, baste with the reserved marinade, and broil for another 3 minutes, or until the shrimp are pink and cooked through.
