A quick and easy vintage appetizer recipe. A savory mixture of shrimp, mayonnaise, and cheddar cheese is spread on crackers and baked or broiled until hot and bubbly.

1 (4.5 oz) canCanned Shrimp, drained (or cooked shrimp)
1/3 cupMayonnaise
1/4 cupGrated Cheddar Cheese
1 tbsp (Optional)Minced Onion
1 dashSalt
1 dashPepper
Approx. 24Ritz or other Crackers

Instructions

  1. Preheat your oven to 375°F (190°C) or set your broiler to low.
  2. Drain the shrimp well. If using canned shrimp, mash it with a fork. If using larger cooked shrimp, chop them finely.
  3. In a small bowl, combine the shrimp, mayonnaise, minced onion (if using), salt, and pepper.
  4. You can either stir the grated cheese directly into the shrimp mixture now, or save it for topping.
  5. Arrange the crackers in a single layer on a baking sheet.
  6. Spread a small amount of the shrimp mixture onto each cracker.
  7. If you did not mix the cheese in earlier, sprinkle it over the top of each appetizer now.
  8. Bake for 4-5 minutes or broil for 1-2 minutes, watching carefully, until the topping is hot and the cheese is melted and lightly browned.
  9. Serve immediately.
