A quick and easy vintage appetizer recipe. A savory mixture of shrimp, mayonnaise, and cheddar cheese is spread on crackers and baked or broiled until hot and bubbly.

Instructions
- Preheat your oven to 375°F (190°C) or set your broiler to low.
- Drain the shrimp well. If using canned shrimp, mash it with a fork. If using larger cooked shrimp, chop them finely.
- In a small bowl, combine the shrimp, mayonnaise, minced onion (if using), salt, and pepper.
- You can either stir the grated cheese directly into the shrimp mixture now, or save it for topping.
- Arrange the crackers in a single layer on a baking sheet.
- Spread a small amount of the shrimp mixture onto each cracker.
- If you did not mix the cheese in earlier, sprinkle it over the top of each appetizer now.
- Bake for 4-5 minutes or broil for 1-2 minutes, watching carefully, until the topping is hot and the cheese is melted and lightly browned.
- Serve immediately.
